Garlic Greens & Golden Tahini Sauce


Well here I am. Back in this weird, wonderful city we call Tangér, Tanja, Tangier.

I can't believe that I almost forgot how much I love this place. In less than twenty minutes you can walk through the busy bustling medina, through the markets, through the maze of the Kasbah, and suddenly you walk through an archway and the portal takes you to out onto a stunning view of the bright blue sea, sailing beyond colorful patchwork rooftops.




I settled in right away. It's like I never left- like these 10 months never passed. It helps that now I have friends here to help me remember my way around and show me the best places to buy fresh oranges and all of those good things.
It also helps that I am lucky enough to live in the most beautiful house, with a bright blue terrace and a well-stocked kitchen. Every night I cook myself a homemade meal. It's become a sort of nesting ritual for me- once I am comfortable cooking somewhere, I can really call it home.

This meal has become my super simple go-to when I'm too hungry to make something elaborate and time consuming. As much as I'd love to be making Moroccan tagines every night, my schedule here has already been full with meetings and planning for all of the choreography and dance I'll be working on. Needless to say, I've needed some quick & easy dishes. This is my new favorite.



Garlic Greens in a Golden Tahini Sauce
(vegan & gf)

serves 2-3

1 tbsp sesame oil 2 large bunches of greens of your choices (I used swiss chard and spinach)
2 cloves garlic, minced
2 cups cooked brown rice
1 tbsp chopped cilantro

1/4 cup tahini
1/4 tsp tumeric
1/2 tsp honey
2 tbsp soy sauce
2 tsp lemon juice
2-4 tbsp water

Heat the sesame oil in a large pan over medium heat. Add garlic and toast just for a second, then add the greens. Sauté until slightly wilted.

In a small bowl, whisk together all of the tahini sauce ingredients except for the water. Then add water by the tablespoon until it has reached a nice drizzle-y consistency.

Serve the greens over prepared brown rice, spoon the sauce on top, and sprinkle with chopped cilantro. Feel free to add chicken or tofu, if you want a little more protein. Bon appétit!

  1. WOW, so bright and delicious looking. Do you think this would be good just as greens without the grains? I love that tahini sauce, so simple but I know it must add so much!

    1. Thanks, Rachel! Yes, I'm sure it would still be delicious with just greens! The grains are mostly there to bulk it up a little for a nice & filling meal.
